Better-than-Takeout Chicken Fried Rice

Serves 3-4


1 cup rice

3 chicken breasts, cooked and shredded

1 onion, diced

2 cloves garlic, minced

1/2 cup frozen peas

4 carrots, diced

2 eggs

3 tablespoons sesame oil or butter

1/4 cup soy sauce

Optional: sesame seeds



Cook the rice with two cups of water in a rice cooker or  stove top. When the rice is cooked, start heating sesame oil or butter in a large skillet over medium heat.

Then add the onion, garlic, carrots and peas and stir for 5-7 minutes. Scramble the eggs into the pan, mixing with vegetables.

Add rice, chicken, and soy sauce to pan. Mix well to combine the ingredients and remove from heat. Serve hot.
